I love making variations of these bean patties. The beans are the base, and then you can put pretty much whatever you have in there, and it will still taste delicious. This is what I happened to have at home on the day of creation. If you don't have all the exact ingredients, go with your gut, and I'm sure you will create something similar but equally fabulous! Serve with vegetables and sauce of some kind. I think the Tahini Sauce worked well with this recipe.
From this recipe, I got 14 patties (roughly 8 cm in diameter). Of course, the number of patties will differ depending on each one's size.
Prep Time20 minsCook Time20 minsTotal Time40 mins
230gbutter beans
230gblack beans
130gyellow onionChopped
100gcarrotThinly grated
2sundried tomatoesIn oil
2tbspcorn starch
3tbspchickpea flour
2dlrolled oats
2tbspchiaseeds
1dlwaterBoiling hot
1tspsambal oelekAdd more if you want to spice things up a bit.
1tspsalt
black pepperTo taste
Some oil for the frying pan
Tools
A food processor comes in handy. Not super necessary though.
1
Start by soaking the chia seeds in hot water. Set them aside and stir occasionally. They need to soak for at least 10 minutes; while they're doing that, we can chop things up. Come on, chop-chop!
2
Chop the onion and sundried tomatoes.
3
Grate the carrot.
4
If the beans were store-bought, they would most likely have swum around in some liquid. Rinse that off. Tip! Save the liquid from the butter beans and use it to make a sauce—either a creamy cashew sauce or tahini sauce. If you don't want to do that right now, save the liquid in the freezer until you're ready.
5
Now it's time to put it all together. Either smush the beans with a fork and then put them and all the other ingredients in a bowl or use a food processor to do the job for you.
6
Put a frying pan on medium heat and add some oil.
7
Does the batter seem okay, or is it too loose? If the latter, just add some more rolled oats. It'll be okay.
8
Use about two large tablespoons of batter to make a pattie. I usually just put it in the pan and then try to make it the right shape and size. If you have a better method, please let me know!
