This is such a simple and healthy snack to eat mid-meal. All you need is that old banana no one wants to eat and some oats. Throw in a diced apple into the equation, and you're done! They are also a perfect thing to pack as a snack when travelling.

Peel the banana and mash it on a plate using a fork.

Add the banana and oats to a bowl and mix it. Depending on the size of the banana (and how ripe it is) you might need to add some more oats. Go with you're intuition. You'll know when it's right.

If you have the time, you can let it rest a bit before frying to let the two ingredients get acquainted. If not, go ahead and put a frying pan on medium heat to get some pancakes cooking.

Use a spoon to scoop out the mixture into whatever size of pancakes you like. Mine are about 8 cm in diameter and a bit over 1 cm thick. I've never actually measured them, but I guess it's thereabout. With this recipe, you would get about 3-4 pancakes.
